Banana Walnut Loaf

Overall I am not a fan of breakfast items and I know that I SHOULD be having more then coffee.

So thank goodness for banana bread!

It is by far my favorite type of breakfast and so easy to make.


3/4 C Butter (room temperature)
2 C Flour
2 tsp Baking Powder
1/2 tsp Baking Soda
3 C Bananas (2 mashed)
3/4 tsp Kosher Salt
1 1/4 C Sugar
3 Eggs
1 C Walnuts (optional)


* Preheat oven to 350

* Butter a 9x5x3 loaf pan

* In medium bowl whisk flour, baking powder, baking soda, & salt (set aside)

* Cream butter and sugar till fluffy

* Add one egg at a time (mix till incorporated, do not over mix)

* Add flour mix and bananas in batches (alternating)

* Stir in walnut by hand 

* Pour in pan and shake out to level

* Bake for 60-70 minutes
