Lucky Black Eye Peas

So I am not sure if they are really lucky or not but it can't hurt.

We eat them every year on New Years Day. We need to start the year off right, right?

Even if they don't provide good luck, they provide a healthy meal!

Both D and V love them so I really should make this more often...it is SO easy.


Black Eye Pea Stew

1 Onion (diced)
3 cans of Black Eye Peas
1 (28oz) can of Diced Tomatoes 
1 (10oz) can of Rotel
1tsp Worcestershire Sauce
3/4 tsp Garlic (minced)
1/2 tsp Kosher Salt
1 (4oz) can Chopped Green Chilies
4 tsp Molasses
4 Beef(less) Bouillon Cubes 
1/4 tsp Ground Cumin
1/4 tsp Black Peper

* Dump everything into the Crockpot and stir.

* Cook for 8hrs on LOW

***TIPS***

* For any of the "canned" items feel free to use fresh. 

* I have stopped using Rotel (they are in cahoots with Monsanto...boooo) 
So by adding an extra 3/4 cup of diced tomatoes and one diced jalapeno pepper it will give you the same outcome.

* If you are good with meat go ahead and use beef broth
