Blueberry Lemon Loaf

Not that we would ever get tired of scones...

But this is a quick little bread that uses up blueberries that I always tend to over buy (can you over buy blueberries?)

I also love how this works well for a breakfast, snack, or dessert.

1/3 C soft butter
1 C white sugar
1/4 C lemon juice
2 eggs
1 1/2 C flour
1 tsp baking powder
1 tsp salt
1/2 C milk
2 TBSP lemon zest
1 C fresh blueberries
2 TBSP flour

* Preheat oven to 350
* Butter a loaf pan
* In a bowl cream butter, sugar & lemon juice
* Beat in eggs
* In a bowl combine flour, baking powder & salt
* Stir into wet mix alternating with milk
* In the blow you used for the dry mix add your blueberries with 2TBSP flour (coat)
* Fold in blueberries and lemon zest
* Pour into loaf pan
* Bake for 60 min
* Cool for 40 min
